I never liked the taste of the masa with the lard (which is the traditional way tamales are made). Your recipe has changed the game completely for me. Using avocado oil gives it a light, moist consistency and flavor. My favorite filling is green chile pork, and then I add some diced roasted poblano peppers and yellow corn kernels for added texture and flavor. Adobo chicken is also a great filling. I do equal parts filling to masa, and I steam in a big stock pot for 2 hours, or 20 minutes in a pressure cooker. Perfect tamales every time, and this is now my go-to recipe every holiday season.
