This One’s A Keeper.

This soup was an instant favorite in our house. ♡

It’s super easy to make in around 30 minutes with a simple list of ingredients, and somehow tastes like so much more than the sum of its parts. The magic here is the garlicky Parmesan tomato broth, which stays nice and light but is bursting with zesty flavor. When simmered together with chewy pasta rings, savory Italian sausage, and a hint of kale, every bite of this soup is perfectly balanced and tastes sooo cozy and comforting.

I love that it’s one of those soups that is easy enough for a weeknight, hearty enough to actually fill everyone up, and easy to customize with whatever you’ve got in the fridge. So the next time you’re craving a brothy soup, grab some pasta and give this one a try!

Puff Pastry Chicken Pot Pie https://www.gimmesomeoven.com/puff-pastry-chicken-pot-pie/ https://www.gimmesomeoven.com/puff-pastry-chicken-pot-pie/#comments Tue, 20 Jan 2026 15:04:23 +0000 https://www.gimmesomeoven.com/?p=92329 puff pastry chicken pot pie

Big On Flavor, Low On Fuss!

If you love homemade chicken pot pie as much as I do but tend to avoid it because it feels like too much work, puff pastry is the genius, weeknight-friendly shortcut you’ve gotta try. ♡

I absolutely adore pot pie and have made plenty of versions over the years. But once I started using puff pastry as a topping instead of traditional pie dough, I never looked back. It bakes up perfectly flaky and buttery, looks so pretty, and delivers all of those nostalgic pot pie vibes with a fraction of the work. Plus, cutting it into pieces and layering it on top means more golden edges and crispy bits in every scoop — so good!

I also have a bit of a soapbox about bland, boring pot pie filling, and I promise this one is anything but. The creamy sauce is layered with flavor from crispy bacon, Parmesan, plenty of garlic, and fresh herbs, then loaded up with classic veggies and tender chicken. If you’d like to make things even easier, I highly recommend shredding a rotisserie chicken to cut down on prep time. I also love making the filling earlier in the day — or even the day before — then stashing it in the fridge and adding the puff pastry right before baking on busy nights. It’s one of my favorite comfort food recipes that never disappoints!

My Favorite Kind Of Hot Chocolate

Whenever I’m craving a warm mug of hot chocolate, this Mexican-inspired version is my personal favorite. ♡

It takes inspiration from traditional Mexican hot chocolate, adding a light touch of chile to the classic cinnamon-chocolate base. It’s not overly sweet, and I love how the subtle extra layers of spices, vanilla, plus a pinch of salt (important!) balance the richness of the chocolate.

It’s easy to make in just a few minutes, and you can easily customize yours with whatever type of milk or sweetener you prefer. So the next time you’re craving hot chocolate, grab some cinnamon and chili powder and give it a try!

My Kind Of Lasagna

After the chaos of the holidays, I’m all about dinners right now that are as easy as humanly possible. Enter this skillet lasagna. ♡

It delivers all the cozy, saucy, cheesy vibes of classic lasagna — without the multiple-hours-of-prep and layering commitment. Everything cooks together in one pan, the noodles soak up a perfectly flavorful tomato sauce, and it’s all finished with generous scoops of ricotta and plenty of melty cheese.

We had friends over to taste-test this one, and everyone raved, went back for seconds, and immediately asked for the recipe. The flavors are simple but so good. If you love lasagna as much as we do, I can’t recommend this one enough!

Split Pea Soup with Ham https://www.gimmesomeoven.com/split-pea-soup-with-ham/ https://www.gimmesomeoven.com/split-pea-soup-with-ham/#comments Wed, 17 Dec 2025 19:12:55 +0000 https://www.gimmesomeoven.com/?p=91994

Yes, You Should Make Split Pea Soup

This cozy split pea soup is one of my all-time favorite ways to use up leftover ham. And honestly, the broth alone is reason enough to make it. ♡

As the soup simmers, the ham hock (or leftover ham bone) slowly releases all of its smoky, savory goodness into the broth, adding sooo much flavor to every bite. Simmered together with tender split peas, chopped veggies, and a few simple seasonings, everything comes together into a deeply flavorful soup that always tastes like so much more than the sum of its parts.

It’s the kind of low-fuss, ultra-cozy, back-pocket recipe I love to make whenever we have leftover ham in the fridge. I know you’ll love it too!

Buckeyes https://www.gimmesomeoven.com/buckeyes/ https://www.gimmesomeoven.com/buckeyes/#comments Sat, 13 Dec 2025 21:40:06 +0000 https://www.gimmesomeoven.com/?p=91954 buckeyes recipe

The Best Buckeyes (Peanut Butter Balls!)

Raise your hand if you grew up loving these chocolate peanut butter balls! ♡

These nostalgic treats are always such a crowd favorite, but I’ve found that the traditional version can lean a bit too sweet for my taste. So over the years, I’ve started mixing a little cream cheese into the peanut butter filling and have found that its subtle tang balances the salty peanut butter and sweet chocolate perfectly. Each bite is rich, creamy, and totally irresistible!

Best of all, buckeyes are easy to make (no oven required), easy to store (a great treat to have ready the fridge for busy holiday seasons), and of course, easy to love (who can argue with chocolate and peanut butter?) — let’s make some!

Meet Your New Favorite Dinner Rolls

These cottage cheese dinner rolls are about to steal the show! ♡

If you’ve never baked with cottage cheese before, prepare to be pleasantly surprised. It adds such a lovely softness and richness to homemade rolls! These little guys bake up perfectly tender, lightly sweet, and irresistibly fluffy. Plus, the cottage cheese adds extra protein, with each roll clocking in around 7g — not bad!

Best of all, this dough is wonderfully easy to work with. No complicated steps, no fussy shaping — just mix, knead, rise, and roll. Whether you’re serving them for a weeknight dinner, a cozy holiday meal, or saving extras for slider buns (highly recommend!), these warm and buttery rolls are always a treat.

Let’s bake a batch!

Toffee https://www.gimmesomeoven.com/toffee/ https://www.gimmesomeoven.com/toffee/#comments Fri, 05 Dec 2025 16:17:15 +0000 https://www.gimmesomeoven.com/?p=91815

Toffee Time!

There are few sweet treats I adore more than a really good homemade toffee. ♡

The sweet-and-salty crunch, the melty chocolate on top, the way it breaks into those satisfyingly snappy little pieces — it’s absolute dessert perfection, if you ask me.

After making lots of toffee over the years, this is the recipe I’ve happily landed on as my personal favorite. It starts with a simple buttery toffee base, gets topped with chocolate chips that melt into a glossy layer, and finishes with a sprinkle of nuts (totally optional) and flaky sea salt. And I have to say — one of my favorite things about this version is that it doesn’t stick to your teeth!

If you’re new to toffee making, I definitely recommend using a candy thermometer to help everything cook to the proper temperatures. I’ve also included lots of tips below to ensure the process goes smoothly. It’s not difficult, and all you need are a few simple ingredients to make it happen. So let’s do it!

Buttery, Soft, Chewy and Irresistible!

If you’ve never made homemade caramels before, you are in for such a treat — they’re surprisingly simple to make and unbelievably delicious. ♡

A handful of pantry staples and a gentle simmer on the stove are all it takes for the mixture to magically deepen into a rich, golden caramel. Once cooled, the caramel slices into soft, chewy squares that are downright irresistible with a sprinkle of flaky sea salt. Wrap them in little twists of wax paper or cellophane wrappers, tuck them into jars or tins if you’d like to gift them, and you’ll have the most delicious batch of caramels ready to share. I love these little guys so much!

If you’re new to caramel-making, please take a few minutes to read through the tips below to help everything go smoothly. It’s not a difficult process — it just requires a bit of patience. And the payoff is absolutely worth it if you love homemade caramel as much as I do. Let’s make some!
