have you figured out what should be done differently to avoid this? There were obviously no crackles, either when they flattened. I’m giving them to someone, and the photos look soo good. Now they look weird, but they do taste good.

The recipe itself creates the perfect texture and chewiness! I double the ginger and add an extra teaspoon of cinnamon because I like them spicier too. But the actual texture and overall flavour of just the original recipe creates almost a perfect ginger molasses cookie! Just adjust the spices to your taste and try it again, you won’t be disappointed. Make sure the dough is well chilled as well, I leave my overnight so all the flavour sets in and the cookies bake perfectly!
